What brought you to the yachting industry?

Some lucky accident, I guess! When you follow your heart and let the wind carry you, miracles happen.

How would you describe your culinary style as?

Fresh, creative and brave, inspired from sources across the world and full of love. In the kitchen, everything is clean from preservatives, colourants and artificial flavourings, and everything is made from scratch. My cooking is rooted in the local environment, culture and even its history. We are very much focused on sustainability and responsibility with minimal waste and minimal plastic, so guests can enjoy every mouthful, guilt-free.

How do you prepare for guests’ arrival?

The provisioning is a whole adventure, especially in the places where you have limited choice. We know our guests’ tastes and dietary needs before they step aboard, so I can plan the menu and make a shopping list. I stock up with staples earlier and go for the fresh produce on the day of the guests’ arrival so everything is really fresh and nice.

The fun part is about creating business relationships with local fishermen, farmers and sellers who can deliver the best quality products for our guests. I love exploring local farmers’ markets and can drive far to get the very best.

Also, choosing the wine is a fun game: I’m trying to imagine our guests’ personalities and tastes beforehand based on the very limited info we get. Most of our guests like being surprised every day so we can be creative with cocktails, snacks and food. If the guests have special dietary needs, then we prepare everything even more carefully. Sometimes it’s not easy, but everything is doable!

How is life for children aboard S/Y OCEAN VIEW?

We love our youngest guests! They bring such a special, cheerful atmosphere, everything is new and every day is a great adventure in our pirate-like world. They love helping me in the galley! Usually, kids have their own menu and hours for meals, but it’s not a rule – we are fully flexible: Our youngest guest was only four months old and he enjoyed a lot!

What is your top dish or cocktail to serve your guests?

My green lips mussels in the secret sauce are unbeatable, which is sort of funny considering that I’m a vegetarian myself! I never have had decent French fries at any restaurant so I made my recipe to perfection. The secret? No shortcuts! The authentic crème brûlée usually wins ovations too.

We are fans of gin and mix up endless versions of g&t, but the biggest hit has always been the pina colada. ‘It’s addictive’, they say. For kids, I whip up the virgin version.

What other special treats can guests expect when stepping aboard?

Yoga classes at any level are provided for the guests on request, as well as any kind of dietary or health advice, but only if the guests wish to: We respect our guests’ comfort and intimacy over everything so the choice is always theirs whether to ask questions or not. We can turn the charter into a health retreat, sporty active vacation, nature-immersed expedition or a lively party week depending on what guests feel like doing – usually the best is a bit of all!

We also promote a ‘digital detox’; something very difficult to achieve nowadays but a cool thing to do, just to put your phone away. Of course, Wi-Fi is available on request.

And one of the best special treats is the sourdough bread made on board!
